Ingredients:


For the Potato Base:


4 large potatoes (peeled and boiled)


2 tablespoons butter


1/4 cup grated Parmesan cheese


1/2 teaspoon salt


1/4 teaspoon black pepper


1/2 teaspoon smoked paprika (optional)



For the Filling:


1/2 cup shredded mozzarella or cheddar cheese


2 tablespoons fresh parsley (chopped)


1 tablespoon fresh dill or chives (chopped)


1/4 teaspoon garlic powder


For Coating:


1/2 cup all-purpose flour


2 eggs (beaten)


1 cup breadcrumbs


Oil for frying


Instructions:


1. Prepare the Potato Mixture:


Mash the boiled potatoes until smooth.


Mix in butter, Parmesan cheese, salt, pepper, and paprika. Let it cool for 10 minutes.


2. Make the Herb Filling:


In a small bowl, combine the shredded cheese, parsley, dill, and garlic powder. Mix well.

3. Shape the Croquettes:


Take a small amount of the potato mixture (about 2 tablespoons) and flatten it into a disc.


Place a teaspoon of the herb filling in the center and fold the potato around it to form an oval or cylindrical shape.


4. Coat the Croquettes:


Roll each croquette in flour, dip it in the beaten eggs, and coat with breadcrumbs.


5. Fry to Perfection:


Heat oil in a deep frying pan or pot.


Fry the croquettes in batches until golden and crispy, about 2-3 minutes per side.


Remove and place on a paper towel to drain excess oil.


6. Serve:


Serve hot with a side of spicy mayo, garlic aioli, or a fresh green salad.
